Busy As The Day Is Long


Sharing the Bounty
There has been more tomatoes that needed to be bottled. Ron is making sure we put up enough for the next year. He decided we didn't have enough whole tomatoes for our storage. So, he started and finished off the last of the whole tomatoes in pint jars.

We have bought lots of jars this year for the bounty. It is a good feeling to be preparing for the time when the fresh produce is over. There are still more coming for harvest. Looks like the only ones left now are a few yellow squash, Zucchini, jalapeno peppers and pumpkins.

He cut down the corn stalks this week as well. The raspberries seem to be dwindling now too. When those are done, that will be it until next summer for a full crop again. It doesn't seem possible that summer is about over. We have had a great year with the garden. He probably picked the last of the melon, watermelons and Crenshaws too. Everyone really raved about them and appreciated having some from the garden.

A day hardly went by, (almost never) this summer but what we were eating something out of the garden. We like tomato juice with our breakfasts. Then we'd have Mexican or yellow squash or zucchini with our scrambled eggs. Just the other day we had "huevos rancheros," with homemade salsa. It was a recipe from one of his friends from the Colonies that shared it with us. We made about a dozen jars of the salsa all from the chili peppers aka jalapenos and Anaheim(s) from the garden along with tomatoes. The "huevos rancheros" were just like what Candice and Aaron got in Mexico when they were there last year. Ron also got a recipe from Ronnie for pickling jalapenos. Those are sooooo good. We have those on our sandwiches and eggs. I hope we are making you all envy the bounty from our garden. Those we see soon may get to sample some of our jalapenos and homemade salsa. We can always share the recipe for the industrious. LOL.

I forgot to mention we also had Italian salad or what they call it with home grown tomatoes, with cucumbers and onions with ranch or Italian over it. We ate that instead of green salads, and had lots of cut up cantaloupe or Crenshaw with cut up watermelon. Our son Matt called the watermelon, Watermelonlicious. He is so right.
